What Is Jalebi
Also known as Zulbia in the Middle East, Jalebi is a very popular South Asian sweet. It is a pretzel shaped dessert that is made by deep frying a batter of all-purpose flour which is then soaked in a sugar syrup.
This homemade version of Insant Jalebi is so quick and easy. It requires zero fermentation time and still tastes like what you get on the streets. These are so addictive, trust me!
Tips To Make Instant Jalebi
- The consistency of the batter is very important. It should be on the thick side.
- This instant Jalebi batter doesn't need fermentation so you cannot make it in advance. You have mix it just 5 to 10 minutes before frying.
- If you want thin, very crispy Jalebis then use a very small nozzle to drop the batter in the pan. If you want juicer, thicker jalebis then use a bigger nozzle.
- Fry jalebis on medium heat, high temperature will burn it and make it hard.
- When you touch the sugar syrup it should be sticky and thicker than water. Read below to know how to test the sugar syrup.
How To Check The Sugar Syrup Consistency
For these instant Jalebis you need one-string consistency sugar syrup. When the syrup is slightly cooked and thickened test it with your thumb and forefinger. If one small thread is formed then you have gotten one-string consistency.
How To Store and Reheat Instant Jalebi
You can keep them in the fridge for 2 days. And when you want to eat, simply put them in the microwave and heat for 15-20 seconds.

Instant Jalebi

Ingredients
- ½ cup all-purpose flour
- 1 teaspoon gram flour
- 1 teaspoon cornflour/cornstarch
- ¼ teaspoon baking soda
- ¼ teaspoon orange food colour
- ¼ cup yogurt
- ⅓ - ½ cup water
- oil for frying
Sugar Syrup
- ½ cup water
- 1 cup white sugar
- 1 teaspoon kewra water
Instructions
- Mix all the ingredients except the ones under sugar syrup to make a smooth batter. The batter should have a flowing consistency.
- In a pot add the water and sugar. Bring to a boil and then mix kewra water. Let simmer for 5-8 minutes till the syrup gets almost sticky (one-string consistency). Keep it warm on the lowest heat setting while the jalebis are prepared.
- Add your jalebi batter to a ketchup bottle or a piping bag.
- Heat oil, and make spirals with the batter in the oil. Keep the heat on medium low and when the batter has settled increase the heat to medium high. Fry till crispy on both sides around 2-3 minutes. Do not brown!
- Immediately dip each jalebi in the sugar syrup, till it is coated on both sides.
- Then put on a serving platter, garnish with nuts (optional) and serve.
