Pasta, cheese and cream! Is there a combination better than this? It's the ultimate comfort food. This creamy Mac and Cheese for two is the perfect fix for a quick meal.
It's a hundred times better than a box mix and very, very easy to make. This no-fuss recipe uses a couple of ingredients for a rich, flavourful sauce.
We start by making a roux, then add some seasonings to flavour the sauce and finally cream, milk and cheese are added to get it all dreamy and rich.
You can vary it by adding hot sauce for a kick of chili or mustard paste for some zing. You can also top the Mac and Cheese with breadcrumbs for a crispy golden crust.
Expert Tips and Tricks
- Use block cheese. Don't use pre-shredded cheese. It doesn't melt well and will make the sauce grainy.
- Boil the pasta a minute less than al dente so that it doesn't get mushy later.
- Don't thicken your cheese sauce too much. You want it to be a little runny.
- Use multiple cheeses for a richer taste. Some options to combine with cheddar are gouda, cream cheese, gruyere, fontina and swiss.
- It's not necessary to bake the mac & cheese. The baking makes the top extra crispy and golden which gives a interesting taste and texture.

Mac and Cheese for Two
Ingredients
- 1 cup macaroni
- 1 teaspoon olive oil
- 1 tablespoon all-purpose flour
- 1 tablespoon unsalted butter
- ½ chicken cube
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 teaspoon Italian herbs
- ½ teaspoon white pepper
- ¼ teaspoon salt
- ½ cup milk
- ½ cup heavy cream
- ½ cup cheddar cheese
- mozzarella cheese as required
Instructions
- Start boiling the macaroni in salted boiling water according to package instructions.
- Heat butter and oil in a pan and add the flour. Cook it for 2 mins then add the chicken cube, garlic powder, onion powder, salt, white pepper and Italian herbs. Mix well.
- Pour in the milk and cream. Stir continuously and get rid of any lumps.
- Wait for the sauce to thicken slightly then add in the cheddar cheese. Let it melt. Stir around to get a smooth and silky sauce.
- Then add in the macaroni and mix.
- Take 2 big (or 3 small) ramekins and add the macaroni to it. Top with mozzarella cheese.
- Bake at 200C for 5-8 mins until cheese melts and is golden on top.
- Garnish with chives (optional) and serve hot.
