An iconic double-decker sandwich - this tandoori club sandwich is made with layers of tandoori chicken, juicy tomatoes, hard boiled eggs, crispy lettuce, cheddar cheese and a spicy mayonnaise dressing. It's a very quick, make-ahead recipe for breakfast, lunch or snack.
Club Sandwich originated in America but is also a huge favourite of the Pakistani community. It is basically three slices of sandwich bread with layers of meat, cheese, salad, mayonnaise and eggs in between.
Over the past years, I have gotten a large number of requests for this recipe. So bringing for you guys today; a scrumptious double-decker Club Sandwich filled with a tandoori-spiced chicken and slathered with a mayonnaise and red chili sauce.
Components of Tandoori Chicken Club Sandwich
This is by no means the classic way of making Club Sandwich. But that's the beauty of this sandwich you can make it however you please. The main components of this Sandwich are:
- Bread
- Tandoori Chicken
- Tomatoes
- Cheddar Cheese
- Spicy Mayonnaise Dressing
- Hard Boiled Eggs
- Salad Leaves
How To Prep In Advance
- You can make the tandoori chicken in advance and even freeze it for up to a month. This is what I usually do and then when required use it in sandwiches or on pizzas or salads.
- You can also prepare the spicy mayo dressing and keep it in the fridge for around a week.
Recipe Variations
Here are some other ideas you can use to layer your Club Sandwich. These are just some examples. You can be as creative as you want.
- Chicken: pulled-apart chicken, chicken tikka chunks, grilled chicken
- Dressing: Dijon mustard, ketchup, mayonnaise, pesto sauce
- Egg: omelette, sunny-side up egg
- Cheese: Emmental, Gouda, Monterey Jack
- Other ideas: cucumber, sliced turkey, avocado

Tandoori Chicken Club Sandwich

Ingredients
- 250 g boneless chicken cut in strips
- 2-3 teaspoon tandoori spice mix
- 2 tablespoon yogurt
- 1 tablespoon lemon juice
- ½ teaspoon paprika powder
- 2 tablespoon oil
FOR SPICY MAYO DRESSING
- 4 tablespoon mayonnaise
- 2 tablespoon red chili sauce
- 1 tablespoon vinegar
- ½ teaspoon garlic powder
- 1 teaspoon fresh/dried parsley
FOR ASSEMBLING
- 6 slices sandwich bread
- 2 hard boiled eggs sliced
- 1 tomato sliced
- cheddar cheese slices as required
- salad leaves a handful
- salt & pepper to taste
Instructions
- Marinate the chicken with tandoori spice mix, yogurt, lemon juice and paprika powder. Fry it in oil until fully cooked and slightly charred.
- Make the mayo dressing by mixing all its ingredients together.
- Take a slice of bread. I used whole-wheat, you can use any sandwich bread. Add slices of cheese, tandoori chicken, drizzle the spicy mayo sauce, then place the tomato slices.
- Top this with another piece of bread. Add the sliced boiled eggs, more mayo dressing, a dash of salt and crushed black pepper, some salad leaves, another slice of cheddar cheese (optional) and add the final slice of bread.
- Cut it diagonally, and secure each sandwich with toothpick or cocktail sword. Serve with fries/crisps.
